Scallion Bacon Pancakes
Get ready for this super addicting form of pancake/ tortilla. They are amazing. It is so easy to eat them all in one sitting. They can be used for anything, my favorites including taco shells, teriyaki chicken sandwiches, or just warm and plain. They are thinly rolled out balls of dough, scallions, and bacon lightly fried. What is not good about that combo? Anxious yet? Lets get to it.
What you will need:
1 ¼ cup hot water
2-2 ½ cups flour
½ cup thinly sliced scallions – give or take
½ cup sliced cooked bacon – give or take
1 teaspoon salt – give or take
About ½ cup vegetable/ corn oil for frying
First lets make the dough.
Boil water, then let sit for about 2 minutes to cool slightly.
Sift the flour into a large bowl, and then slowly add the water while mixing contents with a wooden spoon, forming a ball. This can also be done in your food processor.
Ball should be dry enough to handle, but not so dry that it is flakey.
Let stand, covered with a damp towel or cloth for 30 minutes.
Now we will start making the filling.
Diced Green Onion/Scallions
Chopped bacon/ a little extra to munch on the side.
In a small bowl combine the scallions, bacon, and salt; mixing well. Easy enough.
Now for the fun part. Forming the pancakes.
Place the dough on a lightly floured surface. Shape it into a log, and cut into 8-10 equal portions. This depends on how large you want them in the end. I cut 10 pieces and they turned out the size of corn tortillas. – If sticking sprinkle with a little more flour.
Roll out one of the pieces onto floured surface so it is about 1/8 inch thick.
Sprinkle some of the filling on top, leaving about ½ inch around the edges clean.
Pull out your PlayDough making days, and roll the dough up like a snake, pinching the ends closed. It is okay if some of the stuffing comes out, just add it into the next pancake.
Twirl both ends.
And then spiral like a coiled snake.
Flatten with palm and then gently press with the rolling pin into a nice circle. Don’t make them too thick, or too thin; about 2/8 inches thick.
Repeat with the rest.
Cooking the Pancakes.
Heat a skillet over medium heat, adding a little of oil to the pan each time, fry each pancake one at a time for about 2-3 min on each side. This will give you the nice crunchy golden color. Cook too much and you will loose the soft moist center. Pat with paper towel and serve hot. Or use to create other dishes like I mentioned before.
You have to at least eat one plain right off the pan. Heavenly
Later for dinner I used them as taco shells. Lets just say they didn’t last long.
