Orange Heart Ravioli

Well, it’s not truly pink, or red, or orange… so I want to call it Salmon colored Heart Ravioli, but then people glimpsing a read would think there is Salmon inside the ravioli.. So we will go with Orange Heart Shaped Ravioli!

These adorable heart shaped ravioli are colored with tomato paste, and are packed with spicy chorizo, sautéed onion & red bell pepper, and pepper jack cheese. Spicy cheesy deliciousness, just in time for Valentine’s Day.

In an earlier post –Green Ravioli, I mentioned how I am going to make every color in the book “Pasta Pretty Please.”  Here we have Color #2!

The simple dough recipe only called for flour, eggs, and tomato paste. It gives off a nice almost pastel salmon pink color. To get a more vibrant red I would have added beets, but I did not have any on hand, so I stuck with just the tomato paste.

My quick video on YouTube shows you how I created these beauties, but in short, once the dough was rolled out I filled them each with a scoop of the mix, folded over the dough, and used a heart shaped cookie cutter. Then I pinched them down with a fork so no filling would come out.

Once they were all made, they were cooked for 5 minutes in boiling water, then topped off with my signature cream sauce. We ate them so fast that our stomachs could not keep up with our eyes.
