Creamy Chicken Ravioli

I was really craving ravioli the other day, and rather than buy some from the store, I decided to make my own. It’s so easy, I think it’s fun, and mine always taste better than the processed stuff. Using the few ingredients I had in the house, I made a great filling and added some fun color to the pasta.

Ingredients

  • 2 1/4 Cups Flour
  • 3 Eggs
  • Small Chicken Breast
  • 1/2 Yellow Onion
  • 1 Green Bell Pepper
  • 1/4 Cup Cream Cheese
  • Seasoning
  • Food Coloring (Optional)

Directions

First, let’s start making the dough. In a food processor, mix the eggs and food coloring if using, until blended. Add the flour and mix until a dough forms. Place in a bowl, cover, and set aside.

Now let’s start the filling. First slice the chicken breast into equal sized pieces and cook in a pan until golden brown. Add desired seasonings. I used garlic salt, cumin, turmeric, paprika, and pepper.

While the chicken is cooking, slice the onion and bell pepper.

When chicken is done, place in a bowl and let cool down. In the same pan, sauté HALF of the onion/pepper mix. Save the other half of the filling. Cook until tender and golden brown, set aside until it’s time to cook the sauce.

In a food processor, add the chicken, the other half of the pepper/onion mix, and the cream cheese. Blend until coarse.

Now it’s time to start forming the ravioli. First, you will make a sheet of pasta with your roller, scoop a spoonful of filling onto the dough, cover with another sheet, slice into sizes or use a ravioli maker, and fork closed.

Once all your dough or filling has been used, start boiling a large pot of water with salt.

While this is boiling make or heat up your favorite pasta sauce. I made a cream sauce, my fav. Use the rest of your sautéed vegetable in your sauce.
