Pommes Persillade (Potatoes with Parsley and Garlic)

I found this recipe the other day and thank goodness I did. These potatoes turned out amazing, and why wouldn’t they, loaded with butter, cheese and herbs. Yum!

I had these as a side dish with some chimichurri pork chops, a salad, and some baked carrots.
