Parsley, Turmeric, and pepper pasta in a garlic olive oil sauce topped with chicken and peppers.
Alright, I know I have made green pasta before, several times… but this is a new one, I swear. This was my first time making this flavored pasta dough and it turned out super tasty as well as a great color. I got the dough recipe from one of my favorite cookbooks, Pasta Pretty Please.

To make the dough, first find your favorite pasta dough recipe then…
Blanch one bunch of parsley in boiling SALTY water for 15 seconds. Drain and let cool, then add to your blender/food processor. Add eggs, turmeric, and pepper, amount varies on how much dough you are making. Blend as best you can before egg gets fluffy. Pour into a fine mesh sheave or strainer to separate pulp from liquid. You should get a beautiful yellow green color. Add this liquid to finish off your dough recipe. Refrigerate at least 30 minutes.
For the topping, I pan fried some chicken breasts, set aside and then sautéed bell peppers, onions, and tomatoes in olive oil.
For the sauce I heated up 3 cloves of garlic in 1 tbsp butter until golden brown. Then I added olive oil, and the sautéed vegetables. Throw the cooked pasta on top, mix well, and top with chicken.
