
I really, really tried to use everything in my house before going to the grocery store, and because of this I have been getting pretty creative. I had one chicken breast, a bag of frozen mixed vegetables, frozen spicy green chilis, some chicken broth, and rice…and hence the name of this dish.
First, I cut the chicken breast into 3 thinner breasts, seasoned them with garlic salt and some french fry seasoning, and fried them in some olive oil, then set them aside.
In the same pan I poured in 2 cups of chicken broth (left over from when I made the shredded chicken, mashed potato balls), 1/4 cup of the spicy green chilis and 6 garlic cloves.
Once the broth was boiling, I added in just over 1 cup of rice and about 1/4 cup of the frozen peas/carrots, turned down the heat, covered it, and cooked it for about 15 minutes until the rice was done.
Once the rice was done cooking, I plated it, then added the diced chicken on top, and the spicy invention was done.
It turned out great, I would definitely make this again.
Except that the next time the ingredients will be planned.
